Determination of Escherichia coli/coliforms in lettuce sold in the 10 de Agosto market in the city of Cuenca

Abstract

Abstract

Introduction: The presence of coliforms and E. coli in lettuce suggests fecal contamination, which may cause gastrointestinal diseases.

Objective: Determine the amount of E. coli/coliforms present in lettuce sold at the 10 de Agosto market in the city of Cuenca.

Methods: Biochemical analysis was performed in the laboratory. Universe made up of all lettuce vending establishments at the 10 de Agosto Market in Cuenca. 30 samples were collected for identification of E. coli/coliforms in lettuce in May 2023 with Compact Dry plates. Colony-forming units of E. coli/coliforms were quantified.

Results: A positive growth of total coliforms was observed in all dilutions analyzed, with a higher proportion in the 1:1000 dilution (86.7% of the samples); 13.3% of the total coliform samples exceeded the maximum acceptable volume according to the Compilation of Microbiological Standards of Spain; however, all samples were negative for the presence of E. coli.

Conclusions: Coliforms were detected in lettuce, although not E. coli, with 13.3% exceeding the permitted standards. It is vital to ensure hygiene and proper handling to protect the health of the consumer.
