Determination of Salmonella spp. in Cuban-type raw chicken breasts sold in a market in Cuenca, Azuay

Introduction: Salmonella spp. is a genus of Gram-negative bacteria that cause gastrointestinal diseases in humans, commonly found in poultry and cattle. It is transmitted by contaminated food such as raw chicken and is one of the main causes of gastrointestinal diseases.
Objective: Determine the presence of Salmonella spp. in Cuban-type raw chicken breasts sold on the street in a market in Cuenca, Azuay.
Methods: Universe made up of all the raw chicken vending establishments in a Cuenca market, from which a sample of 30 outlets was selected for the identification of Salmonella spp. in raw chicken in May 2023, for which Compact Dry plates for Salmonella spp.
Results: The results indicated a positive growth of Salmonella in all the 1:10 and 1:100 dilutions, and in 16.7% of the samples in the 1:1000 dilution.
Conclusions: The prevalence of Salmonella spp. observed in the samples is high, which suggests a potential risk on the health of the consumer. These findings underscore the need for improved hygiene and food safety control measures throughout the poultry supply chain, from farm to point of sale, as well as the relevance of laboratory testing.
